Are you traveling or have a late night at work and you need food. But, you want to eat healthy for under $10, impossible?! I say no!

Chipotle is a great choice and option for eating healthy and cheap with almost unlimited customized options. The below meal cost a total of $7.09!

Burrito Bowl

1/2 brown rice and 1/2 white rice

1/2 kidney bears and 1/2 black beans

Add fajita vegetables

Protein of your choosing ( I got chicken, so it was a little cheaper)

One scoop medium salsa

One scoop hot salsa

Corn mix

Add lettuce

Tortilla on the side

Highs and lows

When we look at any chart or our lives we see ups and downs. Very rarely, if ever, are people or businesses on a straight trajectory up. Constant gains, always acquiring clients, never experiencing downtowns or hitting your numbers every month is hard to sustain over a two to five-year time frame.

How we deal with the lows, determines how quickly we get back to our even or back to our upward movement. Some lows are harder to come out than others. No matter how long the lull may be, it is important to start back up with a plan.

A plan that can start small and increase over the coming months. Make sure your short-term and intermediate goals are achievable, knowing that you would prefer a longer term, upward moving positive trend. That will be more beneficial over the sharp upturns, which ultimately lead to the same speed of down turns.

There are always highs and always low. Celebrate them all, but always have a plan when the lows come. It will make the journey back to positive that much more enjoyable.

If you’re reading this, you woke up…YES!!

Now it’s time to get to work. The sun is up and we have a checklist of things to accomplish, personally and professionally.

This may not be the ideal situation you wanted to be in at the beginning of the week, or the beginning of the month. However, here we are.

Let’s lock it down and be the change we want to see in the world. Follow you passion. Make your voice heard in the most productive way possible. Encourage a movement to make progress. Crowd funding

A band that I enjoy listening to recently decided to put out another album. However, they did not want to go through the record labels and all the shenanigans that come along with that.  They decided to do a crowd funding campaign to pay for their studio time and it’s really neat.

This is the second band I follow to do this. They started this movement yesterday and they are already at 75% of their goal. That is the power of fans and a unique marketing angle.

What makes crowd funding an interesting concept?

It’s not the fact that people donate money and get a cd. Anyone can do that, it is about the cool features that you get if you help fund the artist.

A quick example, is you can get a signed guitar from the band or you can get up on stage and play a song with them. If you are so inclined you can buy a package and they will name a song after you!

Those packages just scratch the service, but it hits at a larger point.

They create unique experiences and price them as such. Create a limited supply and post them on their crowd funding website.

Acorn squash with kale and sausage

This is a great recipe as the cooler weather starts to set in. It is easy and can be made during the week. If you would like this to be vegetarian you can sub out the sausage for anything!

Ingredients:

  • 2 medium acorn squash, halved down the middle, seeds removed
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon smoked paprika
  • Olive oil cooking spray
  • 3 teaspoons olive oil, divided
  • 8 ounces hot Italian turkey sausage, casings removed
  • 1 large leek, white and light green parts only, halved and sliced
  • 2 cloves garlic, finely chopped
  • 4 cups tightly packed torn kale
  • 1/3 cup reduced-sodium chicken broth
  • 1/4 cup chopped walnuts
  • 2 tablespoons grated fresh Parmesan
  • 2 tablespoons panko breadcrumbs

Meal Prep:

  1. Heat oven to 375°. Cut a thin slice off round side of each squash half to create a stable base. Sprinkle with salt and pepper and smoked paprika; coat with cooking spray.
  2. Place squash flesh side down on a baking sheet lined with aluminum foil; bake until golden and tender, 30 minutes. Remove from oven; flip squash and set aside.
  3. Heat broiler. In a large nonstick skillet over medium heat, heat 1 teaspoon oil. Add sausage; cook, breaking into coarse pieces, until brown, 6 minutes; transfer to a bowl.
  4. In the same skillet, add remaining 2 teaspoons oil and leek; cook until leek is soft, 3 minutes. Add garlic; cook, 30 seconds. Add kale and toss; add broth. Cover and cook until kale is tender, 5 minutes; stir in sausage.
  5. Divide kale-sausage filling among squash. In a bowl, combine walnuts, Parmesan and panko; sprinkle evenly over squash bowls and coat with cooking spray.
  6. Broil until panko is golden, 2 minutes.
